HOLLYWOOD, Calif. - PRDelivery -- Who knew? This is the very first recipe that I ever learned. Way back in third grade (circa 1970s), I never imagined that it would be so relevant today. It turns out that the teacher was a foodie. This is a simple, yet healthier twist on Guacamole. Most ingredients are probably already sitting in your pantry. Literally. The video was produced while visiting my sister in Chicago over Thanksgiving. Her home had ample supplies of everything. The recipe went over so well that we ended up making 3 batches throughout the day.
This is a scaled down, yet delicious, basic recipe- so it would be easy to add your own spin. Play with choices of Oil... Maybe try Peanut, Sesame, Truffle or (yes) Avocado Oil as a variation. Cumin is the key spice to this version, but feel free to add any more that you like. Same with fresh Herbs and Veggies, if you can grow it or get it fresh, consider throwing it in.

Ingredients: (Appetizer for 2-4 served with Chips or Veggies for dipping)
2 Avocados
1/2 Cup Chopped Tomato
1/4 Cup Chopped Onions
2 Tbsp Chopped Cilantro
1-2 Tbsp Fresh Ground Cumin
1-2 Tsp Olive Oil
2-3 Drops Fresh Lemon Juice
Salt/Pepper to taste
Directions:
1. Halve and pit Avocados, use Spoon to separate ripe part from peel. Smash with fork or vegetable masher to desired smooth or chunky consistency. Add 2-3 Drops of Lemon juice. Mix throughly.
2. Add Tomatoes, Onions, Cilantro and Olive Oil. Mix evenly.
3. Blend in desired amount of Cumin, Salt and Pepper to taste.
4. Feel free to have fun with final plate/presentation. Use spare tomatoes, onions and cilantro to design a Xmas tree on top?
